Hi, I have been reading your blog. I am Spanish so i have Gazpacho recepy if you want... however, you need to know that true Gazpacho has bread, although you can do without... and even though Dukan doesnt allow it, it also has olive oil. Without the olive oil it ... well... it will not be the same... you can obviously not add it, but its my little cheat :-)
Here goes the recepy from a true Spaniard (without the bread, which actually is only used to thiken the Gazpacho, many people dieting or not, do not add bread)
· 1 kg of very red and very ripe tomatoes · 1 large green pepper · 2 garlic cloves · 50 g of cucumber · 100 g of onion · 3 large spoons of olive oil · 3 large spoons of vinegar - but you will need to experiment, i love it with more vinegar my mom with much less... its up to you!! · salt to taste
Peel and cut the tomatoes preferably remove the seeds but some people leave them, peal and cut the garlic, cut the pepper and this time, yes remove seeds, peel and cut the cucumber, cut the onion. Put it all in a mixer until its totally liquid and salt to taste. Put in the fridge for quite a while as it is eaten very very very cold - remember it is our lifesaver in the 40ยบ C Spanish summers!!
Normally we then cut some onion, cucumber, tomato and pepper -so basically all the veggies -into tiny pieces as if they were croutons, and add it to the Gazpacho... but that's optional!

forgot to say, add the oil and vinegar to the mix. If you do it while sitll mixing it will thicken the "soup" a bit. I sometimes add it just before eating it. Try first adding it while mixing... enjoy!!!
Hello Again, did you try the Gazpacho? now that you are not following Dukan you can eat it any time, with a spoon full of olive oil and everything!! Please do let me know if you tried it. (still at a PC at work, so im commenting as anonymous again)
